  • Lemon 1 piece
  • Sugar 10 tablespoons
  • Pink food coloring to taste
  • Yellow food coloring to taste
  • Green food coloring to taste
  • Cocoa Powder 1 tablespoon
  • Dried Fruits to taste
  • Nuts to taste
  • Salt to taste

Step-by-Step Guide

Step 1

This version of the cake is steamed, so you will need a special device – a steamer or a steaming pot. If using a pot, pour 10 tablespoons of water into the bottom part. The upper part of the steamer should be lined with a large piece of clean cotton cloth (so that you can remove the finished cake along with the cloth). You will also need a detachable baking mold: set aside the bottom part, as it will not be used, and secure the sides with a clasp, greasing the inside with vegetable oil. Place it on the cloth in the steamer – this will be our mold for the cake.

Step 2

Before mixing, sift all the rice flour into a large bowl.

Step 3

First, prepare the dough for the first, bottom, chocolate layer: in a separate bowl, mix 1 cup of rice flour, a pinch of salt, 2 tablespoons of sugar, 1 tablespoon of cocoa, and 4 teaspoons of water. Rub the mixture with your hands into a uniform crumb and sift again – you can do this directly into the mold, then level the layer.

Step 4

For the second layer – green – take 1.5 cups of rice flour, a pinch of salt, and 2 tablespoons of sugar. In a separate bowl, pour 4 teaspoons of water and add a drop of green food coloring. Pour the colored water into the flour mixture and rub the mass into crumbs with your hands. Sift the mixture into the mold over the brown layer and level it.

Step 5

Do the same for the 3rd and 4th layers, using yellow and pink food coloring. In the yellow layer, add 1 teaspoon of water and the juice of half a lemon.

Step 6

Finally, make the top 5th layer – leave it white.

Step 7

Decorate the top of the cake with nuts and dried fruits. Steam the cake for 30 minutes (if cooking in a pot, keep the cake on low heat for another 5 minutes).

Step 8

Remove the cake by holding the cloth, and carefully take off the sides.
