Ingredients
- Strawberry 30 oz
- Sugar 5 oz
- Fresh Mint 0 oz
- White Balsamic Cream to taste

Prepare all the ingredients.
Step 2
Cut a quarter of the strawberries into wedges, sprinkle with a quarter of the sugar, mix, and let sit for 15 minutes. The sugar should dissolve, and the strawberries should release pectin.
Step 3
Cut the mint leaves into thin strips.
Step 4
Blend the remaining strawberries with the rest of the sugar until smooth.
Step 5
Pass the strawberry puree through a sieve to remove the small seeds.
Step 6
Place the strawberry wedges in a bowl and drizzle with balsamic cream.
Step 7
Pour the strawberry puree into the bowl with the strawberries.
Step 8
Serve the cold strawberry soup, garnished with the sliced mint.
