
Cold Pumpkin Soup with Warm Shrimp

Ingredients
- Star anise to taste
- Pumpkin 1 piece
- Orange juice concentrate 10 fl oz
- Mandarin Puree 0 oz
- Oranges 5 oz
- Sugar to taste
- Salt to taste
- Vinegar essence to taste
- Herbs 1 bunch
Step-by-Step Guide
Step 1
Peel the pumpkin, cut it into small cubes, and bake in the oven until cooked.
Step 2
Mix the pumpkin with orange juice and pulp (150 grams), blend with added spices.
Step 3
Boil the carrots, add salt, sugar, vinegar, oil, garlic, coriander, and cardamom (to taste should resemble 'Korean carrots').
Step 4
Blend everything until smooth.
Step 5
Pour the base into a bowl, form a dumpling from the carrot puree, and place it in the center.
Step 6
Top the dumpling with warm boiled shrimp and garnish with herbs.
