Cold Plum and Raspberry Soup with Tarragon

Ingredients

  • Plums 25 oz
  • Dry White Wine 1 cup
  • Raspberry leaves 5 oz
  • Sugar 6 tablespoons
  • Tarragon 3 sprigs
  • Orange bitters 2 tablespoons
  • Water ¼ cup

Step-by-Step Guide

Step 1

In a pot, bring water to a boil, add the plums, reserving 1, and cook for 2–3 minutes until the skin starts to peel away. Quickly transfer to ice water, then drain.

Step 2

Peel the plums from the skin and pits, chop slightly, and transfer to a saucepan. Add the wine, raspberries, sugar, tarragon, orange liqueur, and water. Cover, bring to a boil over medium heat, reduce the heat, and simmer for 15–20 minutes until the plums are very soft.

Step 3

Remove from heat and transfer to a bowl set in a larger bowl of ice water, stirring to cool quickly.

Step 4

Remove the tarragon sprigs and transfer the mixture to a blender. Blend until smooth.

Step 5

Pour into bowls and serve, garnished with finely chopped reserved plum and raspberries on top.
