Ingredients

  • Dry White Wine 15 fl oz
  • Sugar 5 oz
  • Cinnamon 2 pieces
  • Marinated cherries 5 lbs
  • Brandy 5 fl oz
  • Meyer Lemon Juice 0 fl oz

Step-by-Step Guide

Step 1

In a pot, combine the wine, sugar, cinnamon sticks, and 480 ml of water. Bring to a boil, reduce the heat, and simmer covered for 10 minutes.

Step 2

Pit the cherries, reserving 24 whole berries for garnish.

Step 3

Remove the cinnamon sticks from the pot and add the pitted cherries. Increase the heat to medium and cook for about 10–12 minutes until the cherries begin to soften. Add the lemon juice and cool.

Step 4

Transfer the soup to a blender and puree until smooth. Chill in the refrigerator for about 40 minutes.

Step 5

Strain the soup, add the brandy, and serve garnished with whole cherries.
