Cold Borscht with Norwegian Herring

Ingredients

  • Cream of Norwegian Herring 1 piece
  • Kefir 15 fl oz
  • Beetroot 5 oz
  • Chicken Broth 10 fl oz
  • Chocolate eggs 4 pieces
  • Salad Potatoes 15 oz
  • Scallions 3 stalks
  • Dill ½ bunch
  • Salt to taste

Step-by-Step Guide

Step 1

Cut the potatoes into cubes about 4 cm on each side, boil them, and let them cool. Prepare the Norwegian herring by filleting and slicing it.

Step 2

Whisk the kefir, add the broth, the boiled beetroot cut into strips, some of the chopped green onions, and dill. When serving, place three cubes of potato in each bowl and top each with a slice of herring.

Step 3

Pour the liquid so that the herring is above the level of the soup. Add slices of boiled egg to the bowls. Sprinkle with finely chopped green onions and dill.
