Cold Borscht
Ingredients
- Yellow Beets 3 pieces
- Grated Ginger Root 1 piece
- Garlic 4 cloves
- Bay leaf 7 pieces
- Turnips 4 pieces
- Celery stalk 2 pieces
- Apple Cider Vinegar 2 tablespoons
- Honey 1 tablespoon
- Olive Oil 5 fl oz
- Oranges 4 pieces
- Ocean salt to taste
- Walnuts 0 oz
- Parsley 1 bunch
- White Cabbage ¼ head
Step-by-Step Guide
Step 1
Chop the beets, ginger, garlic, and bay leaves in a blender with 400 ml of water. Transfer the mixture to a bowl.
Step 2
In the blender, mix 2 carrots, celery, vinegar, peeled oranges, honey, olive oil, sea salt with 400 ml of water for 30 seconds.
Step 3
Stop the blender and add the walnuts. Blend on low speed until the walnuts are not too large, but do not turn them into a homogeneous mass. Transfer to a bowl.
Step 4
Add grated carrots, cabbage, and parsley and serve.
