Cold Berry Soup with Blueberry Sauce
Ingredients
- Strawberry 10 oz
- Raspberry leaves 15 oz
- Concentrated Cranberry Juice ½ cup
- Dry White Wine ½ cup
- Sugar 0.3 cups
- Ground Cinnamon 0.1 teaspoons
- Dessert Yogurt 10 oz
- Fresh Berries 1 cup
Step-by-Step Guide
Step 1
In a blender, combine raspberries, chopped strawberries, and cranberry juice, reserving 2 teaspoons. Blend until smooth, then strain through a sieve, pressing out all the juice into a pot. Add wine, sugar, reserving 2 teaspoons, and cinnamon. Bring to a boil over medium heat and cook for 2 minutes. Remove from heat and transfer to a large bowl. Cover and chill for 3 hours. Add yogurt and mix well.
Step 2
In a blender, combine blueberries, 2 teaspoons of sugar, and 2 teaspoons of cranberry juice. Blend and strain through a sieve, pressing out all the juice.
Step 3
Pour the soup into 4 bowls and drizzle with blueberry sauce.
