  • Cognac 3 tablespoons
  • Baking Powder 1 teaspoon
  • Cinnamon 1 teaspoon
  • Salt ¼ teaspoon
  • Wheat Flour 5 oz

Step-by-Step Guide

Step 1

Line the bottom of a 22 cm springform pan with parchment paper, then grease the entire pan and sprinkle with crumbs made from Jubilee cookies.

Step 2

Peel the apples, remove the cores, slice them thinly, and place them in a separate bowl. Sprinkle with 0.5 teaspoon of cinnamon through a sieve, drizzle with 2 tablespoons of cognac, mix everything, cover with a lid, and set aside.

Step 3

Sift the flour together with salt, baking powder, and 0.5 teaspoon of cinnamon.

Step 4

Beat 4 eggs, 1 cup of sugar, and 1 tablespoon of cognac with a mixer for at least 7–10 minutes until the mixture increases in volume and becomes thick.

Step 5

Gently fold the flour mixture into the egg mixture with a spatula, moving from the bottom up while turning the bowl with the future batter in circular motions to meet the spatula's movements! This is important so that the batter does not deflate and retains air bubbles inside!

Step 6

Pour half of the batter into the pan, carefully spreading it over the entire surface, then layer all the apples on top and cover with the remaining batter.

Step 7

Preheat the oven to 355°F and bake for 40 minutes. Check for doneness with a toothpick — it should come out dry!
