Coffee-Honey Caramel with Walnuts

Ingredients

  • Cream (40%) 1 cup
  • Roasted Peanuts 10 oz
  • Instant coffee 1 tablespoon
  • Ocean salt ½ teaspoon
  • Honey 10 oz

Step-by-Step Guide

Step 1

Lightly chop the walnuts and transfer them to a bowl.

Step 2

In a small saucepan, bring the cream with the instant coffee and salt to a boil. Then add the honey, bring to a boil again, reduce the heat, and cook, stirring occasionally with a wooden spoon, for 15-20 minutes until it reaches 255°F. Remove from heat.

Step 3

Pour the caramel over the walnuts and mix well. Cool in the refrigerator for 10-15 minutes until the caramel thickens slightly. Stir again.

Step 4

Using a spoon, place small mounds on a baking sheet lined with parchment paper or greased paper. Allow to set in a cool place.

Step 5

You may also skip cooling the caramel and pour it in an even layer onto the prepared baking sheet. Let it set, cut into rectangles, and wrap in parchment like candies.
