Ingredients
- Shortbread Cookies 10 oz
- Butter 5 oz
- Sour Cream 10 oz
- Sugar Glaze 1 tablespoon
- Boiling water 3 teaspoons
- Instant coffee 3 teaspoons
- Chocolate eggs 2 pieces
- Semi-soft cream cheese 15 oz
- Cocoa Powder 2 tablespoons
- Powdered Sugar 5 oz
Step-by-Step Guide
Step 1
Crush the shortbread cookies in a bowl, pour in the melted butter (100 grams), and mix. Press the mixture firmly into the bottom and sides of the pan. Chill for 20 minutes.
Step 2
For the filling, beat the butter (100 grams) with the powdered sugar and add cocoa. Dissolve the coffee (2 teaspoons) and pour it into the cream.
Step 3
Beat the cream cheese until soft, add the eggs one at a time, continuing to beat. Mix with the butter mixture and pour into the pan.
Step 4
Preheat the oven to 300°F and bake for 1 hour, placing the pan in the center of the oven. If the top starts to burn, cover the pan with parchment paper.
Step 5
To prepare the topping, beat the sour cream with the sugar glaze and spread it over the baked cheesecake, reserving 2 teaspoons. Dissolve the coffee (1 teaspoon) and pour it into the remaining sour cream. Drizzle this mixture over the cake, swirling both toppings together with a wooden skewer.
Step 6
Place the cheesecake in the oven for 3–5 minutes, then turn off the oven and let the cake cool inside.
