Description

The amount of cardamom in the recipe can vary: for a light flavor, just one teaspoon of the spice is enough. Instead of strong coffee, you can add, for example, coffee liqueur.

  • Wheat Flour 5 oz
  • Butter 5 oz
  • Brown Sugar 5 oz
  • Vanilla salt 0 oz
  • Walnuts 0 oz
  • Whole egg 1 piece
  • Espresso 0 fl oz
  • Cocoa Powder 1 tablespoon
  • Baking Powder 1 tablespoon
  • Salt a pinch
  • Cardamom 1½ spoons

Step-by-Step Guide

Step 1

Sift the flour, ground cardamom, vanilla sugar, baking powder, and cocoa powder into a large bowl (the cocoa powder is mainly for the chocolate color of the dough rather than for flavor). Mix well.

Step 2

Toast the walnuts in a dry skillet over low heat for five to seven minutes until they are slightly dried and lightly browned, then crush the nuts into a fine crumb.

Step 3

Cut the cold butter into large cubes, sprinkle with brown sugar and a pinch of salt, and use a blender to blend everything into a smooth mixture.

Step 4

Add the egg yolk, nuts, pour in the coffee, and while continuing to mix, gradually add the flour mixture combined with sugar and cocoa. The dough should not be too stiff; otherwise, the cookies won't spread a bit in the oven.

Step 5

Roll small balls from the prepared dough, line a baking tray with parchment paper, and place the dough balls on it, leaving some space between them. Place the tray in a preheated oven at 355°F for 15 minutes.

Step 6

A few minutes before the cookies are done, check their softness — you need to take them out of the oven before they harden, or else the cooled cookies will be too tough.
