Coconut Sushi with Raspberries and Oranges
Ingredients
- Water 10 fl oz
- Sushi Rice 5 oz
- Sugar 0 oz
- Salt a pinch
- Coconut Milk 0 fl oz
- Vegetable Oil to taste
- Canned Lemons 10 pieces
- Raspberry leaves 20 pieces
- Dessert Yogurt 5 oz
Step-by-Step Guide
Step 1
In a saucepan, bring water and rice to a boil. Cover with a lid, reduce the heat, and cook for 15 minutes until all the water evaporates. Remove from heat and let sit for another 15 minutes without opening the lid.
Step 2
Transfer the rice to a bowl and add sugar, coconut milk, and salt. Mix well, cover, and let sit for 20 minutes.
Step 3
Lightly grease your hands with vegetable oil and divide the dough into 20 pieces (about 1 tablespoon each) and roll into balls. Then shape each ball into an oval and gently flatten it. Place on a baking sheet lined with parchment paper.
Step 4
On 10 rice ovals, place 1 piece of orange on top, and on the remaining ovals, place 2 raspberries each. Chill.
Step 5
Transfer to a serving plate and place the yogurt in a small bowl alongside it (as a sauce).
