Coconut Pyramids
Ingredients
- Orange zest 0 oz
- Desiccated coconut 5 oz
- Sugar 5 oz
- Salt a pinch
- Egg white 2 pieces
- Grated Chocolate 2 tablespoons
- Milk 3 tablespoons
Step-by-Step Guide
Step 1
Whip the egg whites with salt until stiff peaks form. Gradually add sugar, continuing to whip until the mixture is thick and glossy.
Step 2
Fold in the shredded coconut and orange zest into the egg white mixture. Gently mix.
Step 3
With damp hands, roll the mixture into balls, shape them into pyramids, and place them on a baking sheet lined with parchment paper. You can also use a teaspoon to scoop the cookies, but doing it by hand is quick and easy.
Step 4
Bake at 320°F for 15–18 minutes.
Step 5
Cool the cookies on a wire rack.
Step 6
Melt the chocolate in a double boiler, add a little milk or cream, stir until smooth, and decorate the cookies with drops of chocolate. Optionally, sprinkle with powdered sugar once the chocolate hardens.
