Description

You can replace the baking powder with 0.5 teaspoon of baking soda. If you don't like it too sweet, add less sugar to the batter. I usually sift the flour while constantly mixing it through a small sieve, so the batter turns out lighter and lump-free. I mix cinnamon and cardamom with one of the flour portions to distribute them more evenly throughout the batter. I mix the baking powder with one of the last portions of flour. You should add just enough flour to achieve the desired consistency—it doesn't have to match the recipe exactly. If you use powdered sugar for the topping, it will be softer. You can cut the pineapples smaller or arrange them in whole rings, so that each square of the pie will contain one ring of pineapple.

  • Farm fresh eggs 4 pieces
  • Butter 5 oz
  • Natural Yogurt 10 oz
  • Desiccated coconut 5 oz
  • Wheat Flour 20 oz
  • Cinnamon ½ teaspoon
  • Cardamom to taste
  • Baking Powder 2 teaspoons
  • Vanilla salt 5 oz

Step-by-Step Guide

Step 1

To make the batter rise well, first beat the eggs separately—whites and yolks.

Step 2

Then add sugar and beat again.

Step 3

Pour in the yogurt and mix well.

Step 4

Add flour, cinnamon, cardamom, and baking powder.

Step 5

Add half of the shredded coconut to the resulting batter. The batter should remain slightly liquid but thick, like pancake batter.

Step 6

For the topping, you need to prepare a different type of dough. For this, mash the butter with the remaining flour, shredded coconut, and vanilla sugar. Knead the dough and place it in the freezer for a short time.

Step 7

Grease a baking sheet well with butter and pour the first batter into it.

Step 8

Arrange the pineapple pieces on top.

Step 9

Take the second dough out of the freezer and grate it over the pie so that it evenly covers the entire pie.

Step 10

The oven should be preheated to 355°F; bake the pie for 30–35 minutes.

It should be served chilled, and you can decorate it with powdered sugar or shredded coconut.
