Coconut Pie with Kefir

Ingredients

  • Chicken Egg 1 piece
  • Sugar 1½ glasses
  • Baking Powder 0 oz
  • Wheat Flour 1½ glasses
  • Coconut flakes 5 oz
  • Vanilla salt 1 tablespoon
  • Kefir 1 glass
  • Cream 22% 1 glass

Step-by-Step Guide

Step 1

For the batter, mix 1 egg, 1 cup of kefir (or sour milk), 3/4 cup of sugar, 10 g of baking powder, and 1.5 cups of flour. Pour the batter into a baking pan.

Step 2

For the filling, combine 3/4 cup of sugar, 100 g of shredded coconut, and 1 packet of vanilla sugar (approximately 15 grams) in a dry bowl. Evenly distribute this mixture over the entire surface of the dough.

Step 3

Place in a preheated oven and bake at a temperature of 180–390°F for about 25–30 minutes (depending on your oven). Be careful not to let the coconut flakes burn (after about 8–10 minutes of baking, you can cover the pie with foil).

Step 4

And here, ATTENTION! Evenly pour 1 cup of 20% cream over the hot pie (since we only have 10% and 35% cream in Estonia, I used 10% and 200 ml).
