Coconut Oatmeal Cookies
Ingredients
- Coconut meat 5 oz
- Oat flakes 0 oz
- Eggs 4 pieces
- Semolina 8 teaspoons

Step 1
Break the coconut, cut it into pieces, pour hot water over it, and let it sit for about an hour.
Step 2
Using a mixer, blend the coconut, strain the coconut milk into another container, and use the pulp for the next steps.
Step 3
Cook a thick porridge from the oat flakes. Mix the coconut pulp with three tablespoons of the oatmeal porridge.
Step 4
Add the eggs and semolina. Mix well.
Step 5
Line a baking sheet with parchment paper, place small portions of the coconut-oat mixture on it, pressing down slightly and flattening.
Step 6
Bake in the oven for half an hour at 390°F. Then turn off the oven and leave the cookies inside to cool.
