Ingredients
- Wheat Flour 10 oz
- Sugar 5 oz
- Baking Powder 0 oz
- Salt 0 oz
- Milk 5 fl oz
- Whole egg 1 piece
- Coconut Liqueur 0 fl oz
- Unsweetened shredded coconut 0 oz
- Vegetable Oil 5 fl oz
- Butter 0 oz
- Ground Cinnamon 0 oz
Step-by-Step Guide
Step 1
Preheat the oven to 390°F. Grease the muffin pan with butter or place paper liners in each cup.
Step 2
In a bowl, mix the flour, 75 g of sugar, baking powder, and salt.
Step 3
In another bowl, whisk together the egg, milk, vegetable oil, and coconut extract.
Step 4
Combine both mixtures, add half of the shredded coconut, and mix well.
Step 5
In a small bowl, combine the remaining sugar, remaining shredded coconut, softened butter, and cinnamon.
Step 6
Fill the muffin cups two-thirds full with the batter, sprinkle the coconut-butter mixture on top, and bake for 20-25 minutes until done, checking with a toothpick.
Step 7
Leave in the pan for 1 minute, then transfer to a plate.
