Coconut Cookies with Cane Sugar
Ingredients
- Egg white 4 pieces
- Raw cane sugar 15 oz
- Glucose Powder 1½ tablespoons
- Vanilla extract 1½ teaspoons
- Desiccated coconut 5 oz
- Wheat Flour 5 oz
Step-by-Step Guide
Step 1
Whisk the egg whites with the sugar and syrup in a large heatproof bowl. Place over a water bath and heat until warm. Remove from heat and add the vanilla, shredded coconut, and flour. Mix well. Cover the bowl with plastic wrap and refrigerate until set.
Step 2
Meanwhile, preheat the oven to 300°F. Line two baking sheets with parchment paper.
Step 3
Using a teaspoon, scoop the set mixture and shape into balls with wet hands. Slightly flatten them and place on the baking sheet. Bake for 15 minutes until golden. Let cool on the baking sheet for 5 minutes. Then transfer to a container.
