Coconut Chicken Soup
Ingredients
- Chicken Broth 0 qt
- Mild Chili Spice 1 piece
- Chicken fillet 5 oz
- Banana Leaves 1 piece
- Coconut Milk 5 fl oz
- Ginger 1 piece
- Scallions 1 bunch
- Cilantro 10 pieces
- Lemongrass 1 piece
Step-by-Step Guide
Step 1
In the chicken broth, cook the chicken with the addition of chili, lemongrass, lime leaf, and ginger. Bring to almost a boil, reduce the heat, cover, and simmer for 20–25 minutes.
Step 2
Remove the chicken and strain the broth. Slice the cooled chicken into small thin pieces.
Step 3
Bring the broth back to a boil, add coconut milk, green onion, chicken, and continue to cook for 10 minutes until the soup is heated through.
Step 4
Season to taste with salt, pepper, and chili puree. Serve the soup in warmed bowls, adding a few cilantro leaves to each.
