Ingredients
- Sugar 4 tablespoons
- Water 5 fl oz
- Desiccated coconut 0 oz
- Soy Vanilla Milk 3 tablespoons
- Liquid dark chocolate 5 oz
- Coconut Milk 1 tablespoon
- Agave Syrup 1 tablespoon
Step-by-Step Guide
Step 1
In a saucepan, combine sugar and water. Cook over medium heat for 5 minutes. Let cool.
Step 2
In a skillet, lightly toast the shredded coconut until fragrant.
Step 3
In a bowl, mix soy milk, 3 tablespoons of cooled sugar syrup, and shredded coconut. Stir and add coconut oil. Chill completely and mix in agave syrup.
Step 4
Shape the mixture into small balls, transfer to a plate, and refrigerate for 30–40 minutes.
Step 5
Meanwhile, melt the chocolate in a double boiler. Dip each ball in chocolate and place back on the plate. Leave until set.
