- Poultry 1 piece
- Leek 6 stalks
- Chicken Broth 0 qt
- Rice 5 oz
- Pitted Wild Apricots 5 oz
- Bay leaf 1 piece
- Thyme 4 sprigs
- Parsley 6 sprigs
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut the chicken into pieces.
Step 2
Sauté, pour in the broth, and add bay leaf, thyme, and parsley to the pot. Bring to a boil and simmer for half an hour, skimming off any foam.
Step 3
Then add the white parts of the leek, cut into 2-centimeter pieces. Cook everything together for another twenty minutes.
Step 4
Remove the pieces of chicken from the broth, replace them with prunes, and add rice. Season with salt and pepper. Cook for another twenty minutes.
Step 5
Remove the chicken meat from the bones, place it in the pot with the soup, and serve the soup by ladling it into bowls.
