Classic Shortbread
Ingredients
- Butter 10 oz
- Brown Sugar 5 oz
- Wheat Flour 10 oz
- Glutinous Rice Flour 5 oz
Step-by-Step Guide
Step 1
Using a mixer, beat the butter and sugar until creamy. Sift the all-purpose and rice flour, add a pinch of salt, and incorporate into the butter mixture, stirring with a wooden spoon. Transfer to a floured surface and knead well. Cover with plastic wrap and refrigerate for 30 minutes.
Step 2
Divide the dough into 2 halves and roll one into a circle with a diameter of 20 cm (about 8 inches). Carefully transfer it to a baking sheet. Cut the dough into 8 triangular segments with a knife, poke the dough in several places with a fork, and lightly press the edges of the circle with your fingers. Repeat the same with the remaining dough. Sprinkle the dough with brown sugar on top.
Step 3
Bake for 18–20 minutes until golden brown. Remove from the oven and cut along the marked lines while still hot. Leave on the baking sheet for 5 minutes, then transfer to a container.
Step 4
Preheat the oven to 375°F (375 degrees Fahrenheit). Grease 2 baking sheets with butter.
