Classic pickle soup made with beef broth
Ingredients
- Beef 10 oz
- Potato 3 pieces
- Pearl barley 5 oz
- Carrot 1 piece
- Onion 1 head
- Pickled Cauliflower 2 pieces
- Ground Black Pepper a pinch
- Sour Cream 2 spoons
Step-by-Step Guide
Step 1
Peel, wash, and dice the potatoes, carrots, and onions into small cubes. Peel the pickles and chop them finely.
Step 2
Sort the pearl barley, rinse it, and cook until partially tender.
Step 3
Cook beef broth, add potatoes, bring to a boil, add pearl barley, and simmer on low heat for 7–8 minutes.
Step 4
Sauté the carrots, onions, and chopped herbs in vegetable oil, then add them to the pickle soup.
Step 5
Five minutes before the cooking is finished, add the pickled cucumbers, along with salt and pepper. Before serving, stir in sour cream and garnish with a sprig of fresh herbs.
