Classic Lemon Bars

Ingredients

  • Vegetable Oil 1 tablespoon
  • Butter 5 oz
  • Wheat Flour 2.3 cups
  • Brown Sugar ¼ cup
  • Salt a pinch
  • Farm fresh eggs 4 pieces
  • Powdered Sugar ¾ cup
  • Egg white 2 pieces
  • Granulated sugar 2 cups
  • Meyer Lemon Juice 5 fl oz
  • Citrus Zest Mix 1 teaspoon

Step-by-Step Guide

Step 1

Preheat the oven to 355°F.

Step 2

Grease a rectangular baking dish with high sides (approximately 23x33 cm) with vegetable oil.

Step 3

Prepare the crust. Line the dish with foil, allowing the foil to hang over the edges by 5 cm. Grease the foil with vegetable oil.

Step 4

Set aside 1 tablespoon of powdered sugar. Place the butter, flour (2 cups), both types of sugar (brown and powdered), and salt in a food processor and blend for about 1 minute (until the dough comes together).

Step 5

Press the resulting dough evenly into the bottom and sides (about 1.5 cm high) of the dish with your fingers. Make sure there are no cracks. Place in the oven and bake for 20–25 minutes until lightly golden.

Step 6

Juice 5–8 lemons to obtain 200 ml of lemon juice. Pure lemon juice is for true lemon lovers, but you can use less lemon juice. If desired, add water to reach the desired volume for a milder flavor.

Step 7

Meanwhile, prepare the filling. Whisk the eggs and yolks together. Gradually add the sugar and flour (1/3 cup), whisking until smooth. Add the zest and juice, and whisk again.

Step 8

Remove the crust from the oven. Reduce the temperature to 300°F. Allow the crust to cool for 3–5 minutes.

Step 9

Pour in the filling. Return to the oven. Bake until the filling is set, about 30–35 minutes.

Step 10

Remove from the oven. Cool on the counter. Refrigerate for at least 2 hours.

Step 11

After that, lift the lemon bar out of the dish by the edges of the foil. Discard the foil.

Step 12

Cut into squares or rectangles. Before serving, dust the top with powdered sugar.
