Classic Charlotte
Baking and Desserts • Italian
Description
Classic Charlotte. An important sweet dish in Soviet and post-Soviet history. Light, fluffy batter with a maximum of apple filling — Charlotte has always been seen as a pleasant, simple yet delicious and diet-friendly dish. It is highly recommended to use tart apple varieties, such as Antonovka. They can be added either raw or slightly caramelized in a skillet beforehand. Don’t be shy with the sugar; it magically distributes itself in just the right amount in the batter, while the excess forms a sweet crust.
Ingredients
- Sugar 1 glass
- Chicken Egg 5 pieces
- Wheat Flour 1 glass
- Apple 7 pieces
- Vegetable Oil 1 tablespoon
- Baking Powder ½ spoons
Step-by-Step Guide
Step 1
Preheat the oven. Separate the egg whites from the yolks. Beat the egg whites with a pinch of salt until stiff peaks form, gradually adding sugar.
Step 2
Continue whisking, adding the egg yolks one at a time, followed by the baking powder and flour. The batter should have a consistency similar to sour cream.
Step 3
Grease a baking sheet with vegetable oil. Pour half of the batter onto the sheet, evenly distribute the sliced apples on top, and then pour the remaining batter over the apples.
Step 4
Place the baking tray in the preheated oven. Keep it at 390°F for 3 minutes, then reduce the temperature to 180 degrees and bake for 30 to 40 minutes.
