Classic Beef Broth
Ingredients
- Onion 3 heads
- Veal Shank 175 oz
- Celery stalk 3 stalks
- Carrot 2 pieces
- Leek 3 pieces
- Parsley 1 bunch
- Bouquet Garni 1 bunch
Step-by-Step Guide
Step 1
Cut the onions in half. Place them in a pot cut side down and cook without turning for 5 minutes. Then transfer the onions to a large pot.
Step 2
Sear the shank.
Step 3
In the pot, add the shank, onion, celery, peeled carrot, leek, parsley, and bouquet garni. Cook over medium heat for 20 minutes, then pour in 6 liters of water, bring to a boil, reduce the heat, and simmer for 2.5 hours, skimming the broth. Strain the broth, cool slightly, and remove the fat.
