Classic American pumpkin pie
Ingredients
- Wheat Flour 5 oz
- Butter 5 oz
- Salt ¾ spoons
- Water 0 fl oz
- Pumpkin 1½ kg
- Whole egg 1 piece
- Chicken Egg 2 pieces
- Brown Sugar 5 oz
- Sugar 0 oz
- Ground Cinnamon 2 spoons
- Grated Ginger Root 1 tablespoon
- Ground Nutmeg ¼ spoons
- Ground clove ¼ spoons
- Cardamom a pinch
- 10% cream 10 fl oz
Step-by-Step Guide
Step 1
In a food processor, combine the flour, 1/4 teaspoon of salt, and cold butter, and blend until crumbly.
Step 2
Then, while continuing to beat, gradually add the ice-cold water until the dough comes together into a ball.
Step 3
Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 4 hours or overnight.
Step 4
Cut the pumpkin in half, remove the seeds, and place it in an oven preheated to 390°F.
Step 5
Bake until soft — this will take about 40 to 60 minutes. The flesh should separate easily from the skin.
Step 6
Use a spoon to scoop the skin off the pumpkin.
Step 7
Blend the pumpkin flesh into a puree using a blender, then let it cool.

Beat 1 egg yolk and the eggs until slightly frothy.
Step 9
Add sugar, 0.5 teaspoons of salt, and spices, then mix well.

Pour in the cream and stir again.

Add 4 cups of pumpkin puree and mix until smooth.

On a floured surface, roll out the dough to a thickness of 3–5 mm.

Transfer the dough to the pan and shape the edges neatly.

Prick the dough well with a fork.

Pour the filling over the dough, spreading it to the edges.

Place the pie in an oven preheated to 420°F (about 420 degrees Fahrenheit) for 15 minutes. Then reduce the temperature to 355°F (about 350 degrees Fahrenheit) and bake for an additional 45 minutes. Allow the finished pie to cool completely.
