Ingredients

  • Frozen Cherimoya Fruits ½ cup
  • Frozen Raspberries ½ cup
  • Coconut Liqueur 5 fl oz
  • Chopped almonds 0 oz
  • Wheat Flour 2 tablespoons
  • Chocolate eggs 3 pieces
  • Ground Cinnamon to taste
  • Sugar 0 oz
  • Salt a pinch

Step-by-Step Guide

Step 1

Whisk the eggs until frothy.

Step 2

Add the coconut milk and mix well.

Step 3

Preheat the oven to 355°F.

Step 4

Grind the almonds into flour using a coffee grinder.

Step 5

Mix the almond flour with sugar, cinnamon, salt, and wheat flour (for a gluten-free version, use a universal baking mix of any brand or rice flour, avoid strong-tasting flours like corn flour).

Step 6

Combine the liquid ingredients with the dry ingredients and mix with a mixer until the consistency resembles sour cream.

Step 7

Grease the bottom of a baking dish with butter.

Step 8

Place half of the cherries and blueberries in the dish and pour the batter over them, then evenly sprinkle the remaining berries on top of the batter so they bake at different depths. Some even let the batter sit in the oven for about 5 minutes.

Step 9

You can thaw the berries beforehand and drain the liquid, or you can use them straight from the freezer.

Step 10

Bake for 30 minutes until golden brown.
