Step 1

Lightly toasted almonds should be crushed in a mortar and mixed with flour, baking soda, sugar, and the zest of lemons and oranges. Squeeze the juice from the zested citrus fruits and whisk it together with milk, eggs, and melted butter, then pour this mixture into the bowl with the flour and stir with a fork until a coarse, shaggy dough forms.

Step 2

Spoon the lumpy dough, which consists of small clumps, into the molds (Tefal offers very convenient silicone molds for several muffins) and place them in an oven preheated to 390°F for twenty to twenty-five minutes. After that, let them cool slightly before serving.
