Citrus Cake with Powdered Sugar
Ingredients

- Sugar 5 oz
- Wheat Flour 5 oz
- Farm fresh eggs 2 pieces
- Lemon 1 piece
- Salt ¼ teaspoon
- Dry yeast ¼ teaspoon

- Powdered Sugar 0 oz
Step-by-Step Guide
Step 1
Preheat the oven to 340°F.
Step 2
Mix the butter (125 g) at room temperature and the flour (175 g). Once the mixture is homogeneous, add the powdered sugar (50 g) and mix well.
Step 3
Take a small baking tray (20x20 cm), line it with parchment paper, and evenly spread the dough in the tray (using your fingers or a spoon, whichever you prefer), slightly raising the edges, as the filling will be liquid and may seep under the dough later. Don't forget to poke the dough with a fork to prevent bubbling and to maintain an even thickness while baking. Place the tray in the oven for about 20 minutes to lightly 'golden' the future crust.
Step 4
While the crust is baking, mix the sugar (200 g), flour (2 tablespoons), dry yeast (0.5 teaspoon), salt (0.5 teaspoon), and eggs (2 pieces). Add the zest and freshly squeezed juice from our lemon or orange (you can choose either lemon or orange for a distinctly flavored cake). Mix everything well.
Step 5
Remove the tray with the lightly golden crust and pour the freshly prepared citrus mixture over the crust.
Step 6
Return the tray to the oven for 20–25 minutes. Once the dessert has cooled, sprinkle it with powdered sugar.
