Ingredients
- Farm fresh eggs 3 pieces
- Puff Pastry 10 oz
- Butter 0 oz
- Powdered Sugar 5 oz
- Corn Starch 0 oz
- Milk 10 fl oz
- Dried ground orange peel 0 oz
- Brown Sugar 0 oz
- Grapefruits ½ piece
- Orange zest ½ piece
- Irish Whiskey 0 fl oz
Step-by-Step Guide
Step 1
Line a baking dish with parchment paper. Place the puff pastry in the dish with a slight edge.
Step 2
Preheat the oven to 390°F. Place dry beans on the pastry and bake for 20 minutes.
Step 3
Remove the beans and let the pastry cool.
Step 4
In a saucepan, bring the milk, 40 g of powdered sugar, and zest to a boil. Let it steep for a few minutes.
Step 5
In a bowl, whisk the egg yolks with 40 g of powdered sugar until light and creamy. Add the cornstarch and pour everything into the hot milk.
Step 6
Return the mixture to the saucepan over low heat, stirring constantly until thickened.
Step 7
Remove from heat and add the whiskey. Let it cool.
Step 8
Fill the tart base with the citrus cream, sprinkle with brown sugar to balance the bitterness, and garnish with candied orange peel.
