Cinnamon Sugar Rolls
Ingredients
- Wheat Flour 15 oz
- Milk 10 fl oz
- Sugar 5 oz
- Butter 5 oz
- Ground Cinnamon 2 spoons
- Salt ⅓ spoons
- Dry yeast 0 oz
- Cardamom 1 tablespoon
Step-by-Step Guide
Step 1
Dissolve the yeast in warm milk, add about 60–70 grams of sugar, sprinkle the milk-yeast mixture with 1–2 tablespoons of flour (do not mix) and let it sit for 15 minutes.
Step 2
After 15 minutes, add the remaining flour and salt to the yeast mixture and knead the dough. Incorporate cardamom and about 70 grams of softened butter, and knead the dough (knead by hand for 20 minutes, or with a mixer for 8–10 minutes).
Step 3
Place the dough in a deep bowl, wrap it tightly with plastic wrap, and set it in a warm place for 1 to 1.5 hours to allow the dough to rise.
Step 4
In a bowl, mix 2 tablespoons of cinnamon and 2 tablespoons of sugar.
Step 5
Knead the prepared dough with your hands and roll it out into a square about 45 cm. Spread softened butter over the dough, leaving a 1 cm border around the edges, and sprinkle with a cinnamon-sugar mixture.
Step 6
Roll the dough with the filling into a log, sealing the edges, and cut the log into equal trapezoidal pieces using a very sharp knife.
Step 7
Place the shapes on a baking sheet lined with parchment paper, leaving 5 cm between each one. Cover with a towel and let rise for about 40 minutes. Once the rolls have risen, brush them with beaten egg yolk and sprinkle with sugar or cinnamon, according to your preference.
Step 8
Place in a preheated oven at 210–390°F for about 20–25 minutes, until the buns turn a golden-brown color.
