Step-by-Step Guide
Step 1
Place a pot with milk (reserve 1 cup of milk), sugar (4 tablespoons), lemon zest, and cinnamon on the heat. Bring to a boil.
Step 2
In another container, dissolve the starch in cold milk, add the yolks, and mix everything well.
Step 3
Slowly add the yolk mixture to the hot milk in a thin stream. Place on the heat. Constantly stirring, cook the cream without bringing it to a boil.
Step 4
Pour the cream into dessert bowls or shallow plates and let cool.
Step 5
Sprinkle with sugar. To achieve a crispy caramel crust, the sugar is caramelized with a heated disc.
