Description
Cinnamon Buns are a delightful pastry made with a soft and fluffy dough, generously filled with a mixture of cinnamon and sugar, then rolled up and baked to golden perfection. Ingredients
- Wheat Flour 35 oz
- Chicken Egg 2 pieces
- Milk 15 fl oz
- Dry yeast 0 oz
- Sugar 5 oz
- Salt 1 tablespoon
- Cardamom 2 spoons
- Butter 5 oz
- Ground Cinnamon 2 spoons
- Almond 0 oz
Step-by-Step Guide
Step 1
Melt 150 g of butter in a pot, add milk, and heat to 100°F. In a portion of this mixture, dissolve the yeast with a pinch of sugar, wait a couple of minutes for it to activate, and then mix it with the remaining liquid.
Step 2
Sift the flour and mix it with 100 g of sugar, salt, and cardamom. Add the egg. Gradually pour in the milk and yeast mixture, kneading the dough until it is smooth and shiny. Place the dough in a large bowl, cover it, and set it in a warm place for one hour, until it doubles in size.
Step 3
Knead the risen dough on a surface dusted with 100 grams of flour for 7 minutes.
Step 4
Divide the dough into two parts, roll out each part, spread a thin layer of softened butter, and sprinkle with 25 g of sugar and cinnamon. Roll the dough into a log and cut it into buns about 3 cm thick. You should end up with a total of 50 buns.
Step 5
Place the buns on baking trays lined with parchment paper, and cover them with sheets on top as well. Allow them to rise for about 30 minutes.
Step 6
Remove the paper from the risen rolls. Lightly beat an egg, brush it over the rolls, and sprinkle with sugar and chopped almonds. Place in an oven preheated to 480°F for 5-10 minutes. Then allow them to cool on a wire rack, covering with a towel.
