Ingredients
- Wheat Flour 30 oz
- Water 20 fl oz
- Olive Oil 0 fl oz
- Salt to taste
- Dry yeast 0 oz
Step-by-Step Guide
Step 1
Prepare a starter by mixing 350 grams of flour, 180 ml of water, and 0.5 teaspoons of yeast. The mixture should be lumpy. Cover the starter with plastic wrap and then with a kitchen towel, and leave it in a warm place for 24 hours.
Step 2
Preheat the oven to 480°F.
Step 3
Pour 450 grams of flour into a bowl, crumble 10 grams of yeast, add the starter using a spoon, then add salt, 340 ml of water, and 50 ml of oil. Mix everything thoroughly. Shape the resulting dough into a ball.
Step 4
Grease a bowl with oil, place the dough inside, cover it with a towel, and let it rest for 1.5 hours.
Step 5
Sprinkle the surface with cornmeal, then flatten the dough and divide it into 4 strips. Fold each strip into thirds, tucking in the ends and sealing them. Then fold the dough lengthwise.
Step 6
Place the loaves on a floured towel, cover them with another towel, and let them rest for 30 to 45 minutes.
Step 7
Place the loaves on a baking sheet, gently stretching them.
Step 8
Reduce the temperature to 430°F and spray the oven walls with water from a spray bottle. Place the loaves in the oven and bake for 18–20 minutes.
