Ingredients

  • Water 15 fl oz
  • Sugar 0 oz
  • Salt 0 oz
  • Wheat Flour 15 oz
  • Dry yeast 0 oz

Step-by-Step Guide

Step 1

Mix the dry ingredients.

Step 2

Add water.

Step 3

Knead the dough.

Step 4

Cover with plastic wrap and leave in a warm place for 18 hours! After 18 hours, wipe the work surface with a damp cloth and line it with plastic wrap. Dust the plastic wrap with flour.

Step 5

Place the dough on the plastic wrap. Shape the dough into a rectangle, dusting with flour. Dust the baking sheet with flour. Take the edges of the plastic wrap (with the dough on it) and carefully flip the dough onto the baking sheet. Shape the rectangle again to create a nice, even loaf. Cover with a towel and let it rest for 2 hours.

Step 6

Preheat the oven to 430°F. Place the ciabatta in the oven, reduce the temperature to 390°F, and bake for 35–45 minutes.

Step 7

Allow the finished bread to cool completely on a wire rack. Do not place the bread in a bag or wrap while it is hot, as it will not 'ventilate' inside and the crumb will become wet and sticky.
