Christmas Citrus Cake with Candied Fruits
Ingredients
- Wheat Flour 20 oz
- Milk 5 fl oz
- Sugar ½ cup
- Vanilla salt 0 oz
- Dry yeast 0 oz
- Butter 5 oz
- Chocolate eggs 2 pieces
- Raisins 5 oz
- Rum 3 tablespoons
- Candied fruits 5 oz
- Cinnamon 1 teaspoon
- Ground clove a pinch
- Citrus Zest Mix 1 teaspoon
- Apricot Jam 5 oz
Step-by-Step Guide
Step 1
Sift the flour. Warm the milk, dissolve the yeast, regular sugar, and vanilla sugar in it. Make a mound with the flour, create a small well, and pour in the milk. Carefully knead the sponge and let it sit for 10 minutes.
Step 2
Add salt to the sponge, beat in the eggs, add the butter, and knead the dough. Cover with a towel and place in a warm place for 25 minutes.
Step 3
Wash the raisins, pat them dry, wrap them in a napkin, soak in rum, and let them steep for 1 hour, then place in a sieve to drain the rum.
Step 4
Add the raisins, orange, and lemon candied fruits to the dough. Sprinkle with cinnamon, cloves, add lemon zest, and knead the dough again. Place in a warm place for 25 minutes.
Step 5
Preheat the oven to 355°F. Fill a round cake pan with the dough and bake for 45 – 50 minutes.
Step 6
Remove from the oven, invert onto a rack, and let cool.
Step 7
Heat the jam in a water bath. Brush the cake with the jam.
Step 8
Decorate the cake with chopped almonds and thin slices of lemon.
