Christmas Cake with Quark (Quarkstollen)

Description
Quark is a German dairy product that is more liquid and homogeneous than the usual cottage cheese; regular cottage cheese should be strained through a sieve and may require a couple of tablespoons of sour cream.
Ingredients
- Wheat Flour 20 oz
- Baking Powder 0 oz
- Sugar 10 oz
- Butter 10 oz
- Soft Quark 10 oz
- Ground Almonds 5 oz
- Rum 5 fl oz
- Light Raisins, Seedless 10 oz
- Dried ground orange peel 0 oz
- Candied Lemon Peel 0 oz
- Farm fresh eggs 2 pieces
- Lemon 1 piece
Step-by-Step Guide
Step 1
Soak the raisins in rum overnight.
Step 2
Beat the soft butter (250 grams) with the sugar, add the eggs, and continue beating. Add the quark, 1 tablespoon of vanilla sugar, lemon juice, and zest, and continue to beat. Mix the flour with the baking powder, sift it over the butter-egg-quark mixture, and knead the dough. First, fold in the almonds, then the candied fruits, and finally the raisins, lightly dusted with flour. There are quite a few additions, so it will take some effort to incorporate them.
Step 3
Divide the dough into 2 parts, shape them into 2 oval loaves, and form them into stollen (the stollen should look like a swaddled baby).
Step 4
Bake for about 1 hour at 355°F. While still warm, generously brush the stollen with melted butter (100 grams) and dust with a thick layer of powdered sugar.
Step 5
Allow to cool, wrap in foil or parchment paper, and let 'mature' for about 3 weeks in a cool place.
