Chopped Zucchini Caviar
Ingredients
- Courgette 3 pieces
- Onion 2 heads
- Garlic 4 cloves
- Tomatoes 3 pieces
- Vegetable Oil 0 fl oz
- 9% Vinegar 1 teaspoon
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Remove seeds from the zucchini and cut them into medium-sized cubes.
Step 3
Slice the onion into feathers.
Step 4
Chop the tomatoes coarsely. Optionally, blanch them and remove the skin.
Step 5
Chop the garlic coarsely.
Step 6
In a cast-iron pot, heat the vegetable oil, add the vegetables, and simmer on medium-low heat under a lid for about 3 hours, stirring occasionally.
Step 7
Allow the cooked vegetables to cool until they are just warm.
Step 8
Place the vegetables on a board and chop them with a knife or cleaver until they reach a puree-like consistency.
Step 9
Add salt, pepper, vegetable oil, and vinegar.
Step 10
Distribute the zucchini caviar into sterilized jars and store in the refrigerator.
