Ingredients
- Butter 0 oz
- 70% Dark Chocolate 5 oz
- Whole egg 1 piece
- 33% Cream 5 fl oz
- Powdered Sugar 5 oz
- Coffee Liqueur 0 fl oz
- Gold Leaf Powder to taste
- Chocolate Sauce 5 oz
Step-by-Step Guide
Step 1
Melt 125 grams of chocolate in a water bath. Using a whisk, incorporate the softened butter, then the egg yolk, powdered sugar, and cream into the melted chocolate. Whip until smooth.
Step 2
Pour the chocolate mixture into any molds so that when set, you get the shape of candies. This can be heart-shaped molds or round shapes, such as a plastic egg storage tray. Place in the refrigerator for at least 3 hours.
Step 3
Melt 110 grams of confectionery chocolate coating in a water bath.
Step 4
Remove the truffles from the refrigerator and from the molds and carefully dip them in the coating, shaking off the excess and placing them on parchment paper.
Step 5
In a small bowl, mix the coffee liqueur and gold dust to achieve a paint-like consistency. Using a brush, decorate the candies.
Step 6
You can also melt white chocolate and add red food coloring to achieve the shade you like. Then, use a brush to paint patterns.
