Description
These candies made from ganache are called truffles due to their resemblance to the eponymous mushrooms. Typically, something delicious and alcoholic is added to the ganache for flavoring: brandy, rum, or liqueurs. It's best to use special baking chocolate in the form of drops or wafers for the truffles, but you can also make them with regular chocolate bars.
Ingredients
- 33% Cream 5 fl oz
- 70% Dark Chocolate 10 oz
- Cocoa Powder 0 oz
Step-by-Step Guide
Step 1
Prepare the necessary ingredients.
Step 2
Finely chop the chocolate bar into pieces, or use chocolate chips.
Step 3
Then chop the chocolate.
Step 4
Pour the cream into a saucepan and heat it to 150°F.
Step 5
Pour the cream into the chocolate.
Step 6
Mix the cream and chocolate.
Step 7
Stir until all the chocolate is melted. The ganache should be smooth and uniform. At the end, you can use a whisk to eliminate any unexpected chocolate lumps.
Step 8
Cover with plastic wrap and refrigerate for one hour.
Step 9
Scoop out the chilled ganache with a spoon and roll it into a ball using your hands, then coat it in cocoa powder.
Step 10
Do the same with the entire chocolate mixture.
