Chocolate Truffle with Muscovado Sugar
Ingredients
- Liquid dark chocolate 10 oz
- Muscovado Sugar 5 oz
- Cream 5 fl oz
- Honey 1½ tablespoons
- Butter 0 oz
- Cognac 1 tablespoon
- Cocoa Powder 4 tablespoons
Step-by-Step Guide
Step 1
This dessert will take 2 days to prepare. On the first day, bring the cream, sugar, and honey to a boil. Heat the butter until it becomes a homogeneous hot mass. Pour the butter mixture over the chocolate (the chocolate should contain at least 70% cocoa), and gently stir until all the chocolate is melted. Add the cognac. Cool the mixture and wait until it starts to set. At this point, spread the truffle mixture in a thick layer on parchment paper. Refrigerate overnight.
Step 2
On the next day, cut the set chocolate mass into strips and then into squares. Pour the cocoa powder into a bowl and dip your fingers in it. Then, roll each square into balls and coat them in the powder.
