Chocolate Slices with Salt, Nuts, and Seeds
Baking and Desserts • European
Description
If you have the desire and diligence, you can find 99% sugar-free chocolate and sweeten it with stevia. Instead of walnuts and sesame seeds, you can use any other nuts or seeds — hazelnuts, peanuts, almonds, pumpkin seeds, or sunflower seeds.
Ingredients
- 70% Dark Chocolate 5 oz
- Peeled chestnuts 6 pieces
- Toasted Sesame 1 tablespoon
- Ocean salt to taste
- Ground Cinnamon to taste
Step-by-Step Guide
Step 1
Lightly roast the walnuts and sesame seeds, breaking the walnuts into pieces, but not too small.
Step 2
Melt the chocolate in a water bath or in the microwave.
Step 3
Lightly grease the parchment paper with oil and pour the melted chocolate onto it. It’s even better if you have a silicone baking mat — it doesn’t need any greasing, and once set, the chocolate will come off easily. Spread the chocolate mixture so that the layer is no thinner than 3-4 mm. Sprinkle with coarse salt, cinnamon, sesame seeds, and walnuts. Let it cool and place it in the refrigerator.
Step 4
Once the chocolate slab has completely set, remove it and break it into slices measuring 4 by 4 cm. Place in a container and store in a cool place.
