Chocolate Pudding with Cayenne Pepper and Sea Salt
Baking and Desserts • British
Description
Cayenne pepper and salt serve as flavor counterpoints here, enhancing the sweetness of the chocolate.
Ingredients
- Liquid dark chocolate 5 oz
- 10% cream 15 fl oz
- Whole egg 6 pieces
- Brown Sugar 5 oz
- Vanilla Ice Cream 5 oz
- Cayenne Pepper to taste
- Flaky sea salt to taste
Step-by-Step Guide
Step 1
Whisk the egg yolks with sugar until thick and pale. Lightly whip the cream.
Step 2
Melt the chocolate in a double boiler, mix it with the cream, and then gradually fold the chocolate-cream mixture into the egg yolks that have been whipped with sugar. Add salt and pepper, mix well, and pour the future pudding into molds.
Step 3
Place the molds in a deep baking tray filled with hot water, ensuring they are submerged about one-third of their height. Put the baking tray in an oven preheated to 320°F for forty to fifty minutes.
Step 4
Serve the pudding with vanilla ice cream — it's another contrast: cold against hot.
