Ingredients

  • Wheat Flour 5 oz
  • Butter 5 oz
  • Egg white 6 pieces
  • Semi-soft cream cheese 5 oz
  • Salt a pinch
  • Sugar 5 oz
  • Powdered Sugar 0 oz
  • Milk 10 fl oz
  • 10% cream 5 fl oz
  • Liquid dark chocolate 0 oz
  • Pears 4 pieces
  • Water 10 fl oz
  • Rum 2 tablespoons

Step-by-Step Guide

Step 1

Mix the flour with powdered sugar and salt, then chop with butter in a food processor until crumbly. Mash the cottage cheese with two yolks, incorporate into the butter mixture, and quickly knead into a shortcrust pastry. Roll into a ball and refrigerate for 30 minutes.

Step 2

In a saucepan, heat the milk until boiling over low heat. Whisk 4 yolks with 100 grams of sugar until thick and light in color. Gradually pour the milk into the yolks while constantly stirring. Pour the milk and egg mixture back into the saucepan and cook over low heat until thickened, stirring constantly.

Step 3

Melt the chocolate in a water bath. Add it to the cream and mix well. Combine the cream with the cream, and strain.

Step 4

Peel the pears and cut each into 4 pieces. In a small pot, heat water with 60 grams of sugar, then add the rum and the pears. Simmer the pears until soft.

Step 5

Preheat the oven to 355°F. Roll out the dough into the shape of the pan and prick it with a fork. Place the pan in the freezer for about 15 minutes to prevent the dough from deforming in the oven.

Step 6

Brush the dough with a yolk mixed with water and bake for 10 minutes. Remove the pan and let it cool.

Step 7

Pour the cream into the pan, slice the pears, and arrange them on top. Bake for 40 minutes at 320°F.
