Chocolate-Orange Biscotti with Candied Ginger

Ingredients

  • Butter 5 oz
  • Sugar 5 oz
  • Oranges 1 piece
  • Wheat Flour 15 oz
  • Farm fresh eggs 3 pieces
  • Cocoa Powder 0 oz
  • Baking Powder 0 oz
  • Salt a pinch
  • Candied fruits 0 oz
  • Liquid dark chocolate 0 oz

Step-by-Step Guide

Step 1

Grate the zest of one orange using a very fine grater. Finely chop the candied ginger and chocolate.

Step 2

In a bowl, cream together the sugar and butter until smooth, then mix in the orange zest. Gradually add the eggs to the mixture and stir well.

Step 3

In a separate bowl, combine the flour, salt, cocoa powder, and baking powder.

Step 4

Combine the egg mixture and the flour mixture in one bowl and mix until you achieve a uniform consistency.

Step 5

Fold the chopped candied ginger and chocolate into the prepared dough.

Step 6

Line a rectangular baking pan (approximately 30x10 cm) with parchment paper and evenly spread the dough onto it.

Step 7

Bake in an oven preheated to 345°F for about 25 minutes. Check for doneness by inserting a wooden toothpick into the center of the cake. If it comes out dry, remove the pan from the oven and let it cool at room temperature.

Step 8

Once the cake has completely cooled, cut it into even slices about 6 mm thick using a sharp knife.

Step 9

Arrange the biscotti in a single layer on a baking sheet and return to the oven preheated to 300°F. After 10 minutes, flip the biscotti and leave them in the oven for another 10-15 minutes. When the biscotti are dried out, remove the baking sheet from the oven and allow the cookies to cool completely at room temperature.
