Chocolate Mousse with Almonds
Ingredients
- 70% Dark Chocolate 5 oz
- Liquid dark chocolate 5 oz
- Instant coffee 1 teaspoon
- Egg white 3 pieces
- Sugar 2 tablespoons
- Powdered Sugar 1 tablespoon
- Chopped almonds 0 oz
- 10% cream 5 fl oz
- Raspberry leaves 3 pieces
Step-by-Step Guide
Step 1
First, melt the chocolate and then add the coffee (if you don't have instant coffee, you can use freshly ground coffee, which is what I did). Optionally, you can add nuts. Finely chop the almonds and add them to the chocolate mixture.
Step 2
Whisk the egg yolks with the sugar and vanilla powdered sugar, and place the mixture over a water bath to dissolve the sugar. I whisked the yolks until pale, and when I placed it over the water bath, it turned into something like a cream.
Step 3
Combine the chocolate mixture and the egg mixture. Stir well.
Step 4
Whip the cream and mix it with the chocolate mixture.
Step 5
Pour into cups and refrigerate for 1.5 to 2 hours.
Step 6
Optionally, you can decorate with berries, nuts, Chantilly cream, or simply whipped cream.
