Chocolate Mint Crispy Balls
Ingredients
- Liquid dark chocolate 10 oz
- Butter 5 oz
- Bitter 0 oz
- Sugar 6½ tablespoons
- Red and White Mint Candy ½ cup
- Farm fresh eggs 3 pieces
- Vanilla extract 2 teaspoons
- Wheat Flour 1½ cups
- Baking Powder ¾ teaspoon
- Mint Leaves 1 teaspoon
- Salt ¼ teaspoon
- Mini Chocolate Chips 5 oz
Step-by-Step Guide
Step 1
In a saucepan, combine dark chocolate, butter, and bitter chocolate. Heat over low heat until the mixture is smooth. Remove from heat. Stir in crushed candy and 6.5 tablespoons of sugar.
Step 2
Cool the mixture to a warm state, stirring constantly, for about 30 minutes. Beat the eggs into the chocolate mixture, then add vanilla and mint extract. Combine flour, baking powder, and salt, and incorporate this mixture into the chocolate mixture. Cover and refrigerate the dough for 3 hours or overnight.
Step 3
Preheat the oven to 320°F. Line 2 baking sheets with parchment paper. Take 1 tablespoon of dough, roll into balls, and place on the baking sheet. Bake for about 11 minutes, until the cookies crack on the outside but remain soft inside. Leave on the baking sheet for 5 minutes, press a small amount of crushed candy on top, and sprinkle with powdered sugar. Transfer to a plate and cool.
