- Water 5 fl oz
- Chocolate Gâteau 1 piece
- Sugar 5 oz
- Rum 2 tablespoons
- Milk 0 qt
- Bitter 10 oz
- Butter 5 oz
- Chestnut flour 5 oz
- Whipped Cream 15 fl oz
- White Chocolate 10 oz
Step-by-Step Guide
Step 1
Cut the chocolate gâteau into three layers. Boil 200 ml of water with 150 g of sugar for 3 minutes. Remove from heat and stir in 1 tablespoon of rum. Soak the layers with the syrup and let cool.
Step 2
Bring 1.5 liters of milk to a boil, add 250 g of grated bitter chocolate, and stir until the mixture is smooth and creamy. Add 25 g of butter, then fold in 250 g of whipped cream. Cover the first layer with the chocolate mousse. Allow the mousse to set slightly and cover with the second layer.
Step 3
Mix 200 g of chestnut paste with 50 g of softened butter. Whip vigorously and add 1 tablespoon of rum, then fold in 230 g of whipped cream. Spread the chestnut mousse on the layer and cover with the third layer.
Step 4
Bring 200 ml of milk to a boil with 20 g of sugar; add 250 g of grated white chocolate, then add 25 g of butter; mix thoroughly, let cool, and cover the cake.
Step 5
Place the cake in the refrigerator for 1 hour.
